Build a CNC-Routed Cutting Board: Juice Grooves, Food-Safe Finish, and Edge-Grain Layout

A CNC-routed cutting board is a genuinely good beginner CNC project: it uses simple toolpaths (pocketing and profile cuts), forgives minor mistakes better than a precision-fit joinery project would, and produces something actually useful in the kitchen the same day the finish cures. It's also a project where the details that don't matter on a decorative sign — wood species, finish chemistry, glue choice — matter a great deal, because the finished object is going to have food cut directly on it.
Difficulty, Time, and Tools
This is a beginner-to-intermediate project. The CNC toolpath work itself (a pocket for the juice groove, a profile cut for the outline, optionally a V-carve chamfer or monogram) is straightforward CAM. The part that takes real care is the food-safety side: wood selection, glue selection if you're gluing up multiple boards, and finish selection all have hard rules that are easy to get wrong if you're used to general woodworking or CNC sign-making, where those rules don't apply.

For a standard edge-grain or face-grain glued-up blank, three toolpaths cover the whole board:
- Pocket toolpath for the juice groove: A shallow (roughly 6-10mm deep, 10-15mm wide) pocket following the board's perimeter, offset inward from the edge, cut with a ball-nose or core-box bit for a smooth, rounded groove profile that's easy to clean rather than a sharp-cornered pocket that traps debris.
- Profile toolpath for the outline: Cuts the board's outer shape from the larger glued-up blank. Leave small retention tabs uncut (per our standard tabbing guidance) so the finished board doesn't come loose and chatter against the spinning bit on the final pass.
- Optional V-carve for a monogram or handle cutout: A V-bit toolpath for lettering, or a pocket toolpath to cut a handle opening at one end, both straightforward additions once the main outline and groove are dialed in.
Run a light facing pass across the whole glued-up blank before any other toolpath if the glue-up isn't perfectly flat — even a small amount of glue-line telegraphing or panel warp will throw off groove depth consistency otherwise.
Workholding
Cutting boards are thin, flat panels — ideal candidates for double-sided tape or a vacuum spoilboard rather than mechanical clamps, since clamps in the cutting field would interfere with the perimeter profile pass. If you don't have vacuum hold-down, high-quality carpet tape between the blank and a sacrificial spoilboard, combined with retention tabs on the profile cut, holds securely enough for the light cutting forces a cutting board's soft hardwood and shallow passes actually produce.
Finishing: Food-Safe Only
This is the step where a board built correctly can still be ruined by the wrong finish. Standard wood finishes — polyurethane, lacquer, most stains and sealers — are explicitly not food safe and should never touch a cutting surface. Use only food-grade mineral oil (not "vegetable" or cooking oils, which can turn rancid) as a base coat, applied liberally and left to soak in for several hours or overnight, then wiped of excess. Follow with a food-safe board cream or beeswax/mineral-oil blend for a finish that beads water better and lasts longer between reapplications. Reapply mineral oil periodically (monthly with regular use is typical) for the life of the board — this is genuinely a maintenance item, not a one-time finish.
Safety Notes
- Never use CA glue (superglue) anywhere on a cutting board, even for small repairs — it is not rated as food safe and can leach under the acidic and abrasive conditions of normal food prep. Use a food-safe rated wood glue (most standard PVA woodworking glues, including Titebond III, are food-safe once fully cured — check the specific product's label) for any glue-up.
- Hardwood dust from CNC routing maple, walnut, or cherry is a respiratory irritant and a long-term health hazard with repeated exposure — run dust collection at the router and wear a properly rated dust mask or respirator during cutting and sanding.
- Sanitize a finished board before first use and periodically thereafter the same way you would any wood cutting board — hot soapy water, never a dishwasher (heat and prolonged soaking will crack a glued panel), and occasional disinfection with a diluted vinegar or food-safe sanitizing solution.
